The Best Scrambled Eggs (imo!)

Scrambled eggs? Easy? Sure. Tasty and easy? Check out this recipe. A few little additions take good to the best scrambled eggs.

Top top - Keep the heat low, you don't want to eggs to cook too quickly, as you want to incorporate the creme fraiche into it, keeping the eggs soft and creamy.


  • 3 large free-range eggs
  • A handful of chives
  • A knob of butter
  • 1 tablespoon of creme fraiche
  • Salt and pepper to taste



Eggs are easy, here's how:

  1. Crack the eggs into a bowl
  2. Add salt and pepper
  3. Whisk and set aside
  4. Finely chop the chives


  1. Put a frying pan on a medium heat
  2. Add the butter
  3. Once the butter has melted add the chives and cook for a minute
  4. Add the eggs and turn down the heat to low
  5. Mix the eggs and work quickly so that the eggs don't form into large pieces
  6. After 30 seconds add the creme fraiche and mix in thoroughly
  7. The eggs should only need 30 more seconds and should have a soft creamy consistency
  8. Serve and add your favourtie topping (I love my eggs with smoke salmon)
